Standard BOILED RICE:
2 tbsp salt
5 dried delta leaves
1 star anise
6 green cardamon units
2 1/4 cups/450g basmati rice (Note 3)
Firm ONIONS (NOTE 4):
2 medium onions (yellow, dull hued) , part and finely cut
1 cup/250 ml oil , for searing
1 tsp saffron strings (roughly stuffed) (Note 5)
2 tbsp warm water
1 cup coriander/cilantro , hacked
60 g/1/4 cup ghee or unsalted spread , broke up (Note 6)
Firm onions (above)
Yogurt (Note 7)
1. Make a mix with tomato yogurt, puree, green stew stick, ginger garlic stick, red bean stew powder, stewed cumin powder, turmeric powder, garam masala powder, coriander powder and salt.
2. Take the chicken and marinade it in a comparative mix. Let it rest for 3-4 hours.
